Delicious Chorizo and Cheese Stuffed Chicken Wings

Chorizo and cheese stuffed chicken wings can make a delicious and unique appetizer or main dish. Great for Taco Tuesdays or any other day of the week! Here's a video and recipe you can try:

INGREDIENTS

  • Tacos Everyday Seasoning or H-Town AP Seasoning
  • 12 chicken wings
  • Pickle Juice
  • 1/2 pound chorizo sausage, removed from casing
  • 1 cup shredded cheese (queso quesadilla, cheddar or Monterey Jack work well)
  • Mexican hot sauce (optional, for serving)
  • Jalapeños Sliced (pickled or fresh)

TOOLS

  • Skillet: You'll need a skillet to cook the chorizo in. Any skillet will work, but a cast iron skillet is ideal because it can withstand high heat.
  • Smoker, Air Fryer or Oven set to 400 degrees F
  • Mixing Bowls: You'll need a mixing bowl to combine the cooked chorizo and shredded cheese. A large mixing bowl would be best.
  • Digital Thermometer to check the chicken's internal temp (The best and most accurate we've used are the Thermapen One, the ThermoPop 2 and Executive Series Thermometer)
  • Sharp Knife or Kitchen Scissors: You'll need a sharp knife to cut the wing tips off the chicken wings and to make a small incision in the thickest part of each wing piece. (try our Kegani Damascus Steel Chef's Knife)
  • Baking sheet: You'll need a baking sheet to place the stuffed chicken wings on before baking them in the oven.
  • Parchment paper or aluminum foil: You'll need parchment paper or aluminum foil to line the baking sheet, which will make cleaning up afterwards much easier.
  • Toothpicks: You'll need toothpicks to secure the opening where you stuffed the chicken wings, if necessary.
  • Tongs or a spatula: You'll need tongs or a spatula to handle the chicken wings while you're stuffing them, and to move them around on the baking sheet. (Find the perfect high quality, high temp spatulas)  
  • Oven mitts or potholders: You'll need oven mitts or potholders to remove the hot baking sheet from the oven. (Grab one of these hot pad/potholder/trivets from our friends at Thermoworks)
  • Measuring cups and spoons: You'll need measuring cups and spoons to measure out the ingredients.
  • Spoons to use to stuff the chorizo or a piping bag with a large hole if you want to get fancy

Instructions:

** NOTE ** This recipe can also be replicated in an air fryer, on a grill or smoker.  Just don't use the baking sheet or parchment paper. Make sure to set the "cut" side of the chicken facing upwards.

  • Marinate the wings in pickle juice in a mixing bowl for 8-24 hours. 
  • Preheat your oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or aluminum foil.
  • In a skillet over medium-high heat, cook the chorizo until it's fully cooked, breaking it up as it cooks. Drain any excess fat and let cool a few minutes. 
  • In a bowl, mix together the cooked chorizo and shredded cheese. Season with H-Town AP or Tacos Everyday, to taste.
  • Stuff the mixture into a piping bag and snip off the tip to have enough room for the mixture to squeeze out into the wings. 
  • If using whole wings, cut off the wing tips from the chicken wings and discard or save in a plastic bag in the freezer for chicken stock. Cut the wings at the joint to create two pieces: the flat and the drum.
  • Use a sharp knife or kitchen scissors to make a small incision in the thickest part of each wing piece. 
  • Stuff the incision with the chorizo and cheese mixture, using a toothpick to secure the opening if necessary.
  • Place the chicken wings on the the smoker, air fryer or prepared baking sheet with the cut side facing up and bake for 30-40 minutes, or until fully cooked and golden brown and internal temperature reaches 190-200 degrees F.
  • Serve the chicken wings with hot sauce and jalapenos, if desired.

NOTE: You can adjust the recipe to your liking by adding more cheese or chorizo or even some jalapeño to make it more spicy . You can even add some herbs or spices like spicy serrano or chipotle peppers.

This recipe can be a great appetizer to share at parties, game nights, tailgates or even as a main dish for your dinner or Taco Tuesday gathering with friends and family.
