TURKEY BRINE TIME!!!
What’s in your #brine?
We love a nice citrus herb brine on our Thanksgiving bird 🦃 - which is why we love to use our Fresh Catch! The combination of herbs, citrus, spices and salt give a great complexity of flavor inside the bird and the orange juice and cuties give it a beautiful orange sheen even before the mahogany of smoke!
1 cup Hook’s Rub Fresh Catch
1/2 cup kosher Salt
1 cup Sugar
1-2 cup Orange Juice
2 cups @cutiescitrusofficial Cuties
Enough water to cover bird
1. Blend all ingredients until we’ll incorporated and salt/sugar dissolved.
2. Place thawed turkey in an extra large oven roasting bag and pour in mixture.
3. Cover with enough water to cover the bird and close the top of the bag, letting out as much air as possible.
4. Let the bird brine for up to 24 hours in the fridge before removing from brine.
PRO TIP: Make sure to flip the bird (we had to say it) 2 to 4 times during brining!
