Old Arthur’s Bacon Belly Burnt Ends with Hook’s Tacos Everyday Rub 

You gotta pay homage to those who came before you and paved the way for today. This is a recipe based off of the 160+ year old recipe by Old Arthur’s BBQ on page 71 of the “Black Smoke” book by Adrian Miller which has been an eye opening look into the history of African American’s & Native American’s role in the creation of BBQ as we know it today. ⠀

Ingredients:
Hook’s Tacos Everyday Rub
- 8-10 lb Pork Belly (cut into 1-2 inch cubes)
- Miss Essie's BBQ Sauce 
- 8 Tbs Honey
- 2 Cups Peach Jam
- 2-4 Cups Brown Sugar
- 4-8 Tbs Unsalted Butter (sliced)
- 1-2 Cups Apple Juice

Tools:
- Pit Barrel or other smoker/grill
- Charcoal - we love Tropicoal Ignition or Rockwood
- Oak or Apple wood chunks
- Tumbleweed Fire Starters
Thermoworks Thermapen Mk4 - or other instant read thermometer 
- Sharp Knife
- Small pot
- Foil pans
- Aluminum foil
- Wire rack (can be omitted if placing pork directly on grill, but it makes moving them back and forth so much easier)
- Tongs, Spoons, and other utensils
- Food safe gloves
- Thermoworks Silicon Trivet/pot Holder

Method:
1. We used Hook’s Tacos Everyday to coat these Bakers Bacon meat candy cubes after cutting them from the slab and let them set for about 30 minutes. ⠀
2. When the Pit Barrel cooker came to temp (about 275 degrees), we put a few wire racks of the cubes on the grill and let them cook for about 2 hours over charcoal and wood chunks. ⠀
3. We checked the temperature at 2 hours and the Thermoworks Thermapen Mk4 read 190 degrees and they were almost “poke thru” tender.⠀
4. We then pulled them off into an aluminum pan and coated with Miss Essie’s BBQ sauce, honey, apple juice, peach jam, brown sugar and butter.⠀
5. Covering with aluminum foil, we put the pan back on the pit for an additional 1 hour to let all that sweetness braise the meat.⠀
6. At the one hour mark, these belly burnt ends were melting in our hands so we gently coated each one with Miss Essie’s Original BBQ sauce & the braising mixture and set them in a clean pan then placed back on the smoker for about 10 minutes to let the bbq sauce set.
7. We ate....all... of...them.... #noshame⠀
