Pineapple Pico de Gallo ft. Tacos Everyday
This pineapple pico de gallo is a sweet and spicy twist on traditional pico de gallo that is perfect for summer barbecues and gatherings. This fresh salsa is made with juicy pineapple, diced red onions, jalapenos, cilantro, lime juice, and our Tacos Everyday Rub. The combination of sweet and spicy flavors makes this salsa a perfect accompaniment to grilled meats, tacos, chips, and more.
- 2 cups diced fresh pineapple
- 1/2 cup diced red onion
- 1 jalapeno, seeded and diced
- 1 large seeded and diced tomato
- 1/4 cup chopped cilantro
- 2 tbsp freshly squeezed lime juice
- Hook's Tacos Everyday Rub
- Bag of Tortilla Chips
- Sharp knives
- Cutting board
- Mixing bowl
- Serving dish
- Serving spoons
- Nitrile gloves
- Citrus Hand Juicer
- Dice/chop all ingredients on a cutting board except for the seasoning and lime juice.
In a large bowl, mix together the diced pineapple, red onion, tomato, jalapeno, cilantro, Tacos Everyday and lime juice.
Stir until all the ingredients are well combined.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
When ready to serve, remove the pico de gallo from the refrigerator and give it a good stir.
Taste the pico de gallo and adjust the seasoning as needed. If it's too spicy, you can add more pineapple or red onion. If it's not spicy enough, add more jalapeno.
Serve the Pineapple Pico de Gallo in a serving dish with a spoon as a topping for tacos, nachos, with grilled meats, or with tortilla chips.
This recipe can be easily adjusted to suit your tastes. If you like your pico de gallo sweeter, you can add more pineapple. If you prefer a tangier flavor, add more lime juice. And if you like your pico de gallo spicier, don't hesitate to add more jalapeno or use a hotter variety of chili pepper.
