Pork Belly Popsicles


Pork Belly Popsicles ft. Smokin Sweetness

Smoked Pork Belly Popsicles are the perfect combination of smoky, savory, and sweet flavors. This dish is made by cutting pork belly into 6x1x1 inch strips, smoking them until they are tender and flavorful, and then brushing them in a sweet and tangy sauce before grilling them to caramelize the sauce. The result is juicy and tender meat on a stick with a crispy exterior and a mouthwatering flavor that is sure to impress.

These can be served at family gatherings, gameday watching parties, tailgates or made ahead then reheated at the company potluck! With this you can show Jim you are the best meat smoker in the office!

To make this dish, you will need a good quality pork belly, Hook's Smokin Sweetness Rub to season the meat, thick 6 inch skewers, apple, cherry or maple smoking wood to add flavor, and a sauce to finish the dish.

Hook’s Rub seasoning used in this recipe:


INGREDIENTS:
- 2-10 lbs of pork belly
- Hook's Smokin Sweetness Rub
- Sweet and Spicy BBQ Sauce

Instructions:
1. Preheat your pellet smoker to 225°F or charcoal grill set up in the indirect heat method with a couple of lumps of smoking wood on the coals and the vents open 1/2 way.
2. Cut the pork belly into 6x1x1-inch strips.
4. Season all sides of the the pork to coat.
5. Insert skewers most of the way thorough the middle of the pork belly leaving enough for a handle. Touch up seasoning as needed and set the wire rack
6. Place the rack of pork belly popsicles on the smoker and cook for 2-3 hours, or until the internal temperature reaches 185°F.
7. Once the pork is cooked, brush with the BBQ sauce and cook for an additional 10 minutes to set the sauce.
8. Remove the pork belly popsicles from the smoker and enjoy!
